2. Egg Fried Rice

Ingredients:
- 1 tablespoon vegetable oil
- 1/2 onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon ground black pepper
- 1/2 cup uncooked white rice
- 3 eggs, beaten
- 4 cups chicken broth
- 1 tablespoon soy sauce

- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 3 cups cooked white rice
- 1 cup kimchi, chopped
- 1/4 cup soy sauce
- 1 green onion, chopped

In a large skillet over medium heat, cook the onions and bell pepper in the oil until softened. Add the garlic and chili paste and cook for 1 minute longer.
